<p>MokaPop nasce dal desiderio di avere un espresso sempre a portata di mano. Si tratta di un cluster innovativo che combina l’intensità della miscela Arabica e Robusta con la croccantezza dei ceci e la dolcezza della frutta esotica. Due MokaPop contengono la stessa quantità di caffeina di un espresso tradizionale, rendendo il prodotto un alleato perfetto per chi ha bisogno di una carica immediata.</p>
<p>Il team di lavoro è partito dallo studio di mercato, analizzando i consumi di caffè e prodotti energizzanti in Europa, integrando i dati con i risultati di un questionario sottoposto a un panel ristretto di consumatori.</p>
<p>In fase di sviluppo, particolare attenzione è stata dedicata allo studio del legante al caffè, con prove di processo effettuate con la tecnologia MacIntyre, impiegando ingredienti tal quali per la macinazione. I test sono stati poi conclusi con successo in SOLLICH con la tecnologia Cluster Former, grazie al prezioso supporto dei loro specialisti. Determinanti anche le analisi di texture, eseguite presso i laboratori del DeFENS – Università degli Studi di Milano.</p>
<p>Il packaging è stato progettato con un doppio focus: rispondere alle<br />
tendenze di mercato e assicurare la massima conservazione del prodotto.<br />
Grazie alla tecnologia HDG, MokaPop è confezionato in una pratica confezione tipo doypack saldata al centro, ideale anche per un consumo frazionato. Il confezionamento secondario e le operazioni di fine linea sono gestiti rispettivamente da Livetech e Girotech, garantendo un flusso produttivo efficiente e sostenibile.</p>

<p>Un guscio croccante di cioccolato fondente e miglio soffiato caramellato con all’interno una crema allo yogurt greco e un cuore di confettura di albicocca. La struttura richiama la forma di un uovo, simbolo di nutrimento e semplicità. Ogni uovo è diviso in due metà, ideali anche per essere condivise. Disponibile in confezioni da 2 o 6 pezzi.</p>
<p>Anche per lo studio di BrEggfast, ricerca, analisi, progettazione e revisione sono state la chiave di lavoro. Ad esempio, considerando le caratteristiche delle materie prime coinvolte, la scelta della catena del freddo è stata valutata con estrema attenzione.</p>
<p>Nella fase di industrializzazione del prodotto, gli studenti hanno avuto l&#8217;opportunità di visitare l’azienda Livetech, approfondendo il funzionamento dell’impiantistica e dei processi di produzione basati sulla tecnologia di modellaggio Livemould, un’esperienza particolarmente formativa.</p>
<p>Il packaging primario con la tecnologia Chocal ha rappresentato una scelta ottimale in termini di protezione del prodotto e sostenibilità, così come il confezionamento secondario con Livetech, con utilizzo di materiale riciclato, e fine linea con Girotech.</p>

<p>Dive&amp;Bite nasce dall’idea di uno snack che unisce chips croccanti, cotte su piastra, a una salsa aromatizzata, racchiusi in una pratica confezione. Le chips sono proposte in due varianti: una a base di zucca e una al cacao. A completare l’esperienza, una salsa leggera al latte di cocco e una cremosa purea<br />
di barbabietola e melograno, per creare un equilibrio tra dolce, salato e acidulo. Il<br />
nome Dive&amp;Bite, fusione tra “tuffarsi” e “mordere”, richiama il gesto istintivo e coinvolgente del consumo. Compatta e colorata, la confezione è ideale per un consumo on-the-go, ma anche per momenti conviviali come l’aperitivo, nel formato party size.<br />
Una delle principali sfide è stata la definizione della consistenza ottimale delle chips. Il lavoro si è quindi basato su obiettivi e continui confronti sui punti di forza e criticità. Fondamentale, in particolare, il parere della tecnologa alimentare di Walterwerk, durante le prove effettuate con la piastra da laboratorio.</p>
<p>Anche la messa a punto delle salse ha richiesto un’approfondita attività di ricerca e sviluppo. Sono state condotte specifiche analisi di laboratorio per valutare texture e colore, a conferma della qualità sensoriale complessiva del prodotto.<br />
Per quanto riguarda il confezionamento, è stata adottata una linea integrata che prevede l’utilizzo della tecnologia Comek per il primario, Livetech per il secondario e Girotech per il fine linea.<br />
Nella progettazione dell’intero layout produttivo, tutti i team hanno considerato con attenzione anche naturalmente la gestione dei flussi di polveri e liquidi, con Piovan Food &amp; Powders.</p>

<p>Da oltre dieci anni investiamo nella formazione, collaborando con l&#8217;Università degli Studi di Milano per sviluppare competenze professionali in linea con le esigenze del mercato del lavoro. Questa sinergia è iniziata con seminari nel corso &#8220;Materie prime e tecnologie per l’industria dolciaria&#8221; della Laurea Magistrale in Scienze e Tecnologie Alimentari e si è consolidata nel 2017 con la nascita del Progetto, grazie al contributo delle prof.sse Mara Lucisano e Carola Cappa del Dipartimento di Scienze per gli Alimenti, la Nutrizione e l’Ambiente (DeFENS) di Unimi.</p>
<p>Guidati da tecnologi alimentari e ingegneri della Opessi e delle Aziende partner, insieme alla prof.ssa Carola Cappa del DeFENS e altri docenti e professionisti, gli studenti lavorano sullo sviluppo dei processi per la realizzazione di prototipi alimentari a livello industriale.</p>
<p>Metodologia e competenze: il percorso prevede l’adozione di un approccio strutturato, ispirato al mondo professionale, che consente ai partecipanti di sviluppare e acquisire capacità e competenze trasversali, in linea con le esigenze reali del mercato del lavoro, facilitando quindi per il futuro un inserimento più rapido, consapevole e produttivo nei contesti aziendali.</p>

<p><strong>Perché la competenza è importante</strong></p>
<p>Rispetto ai tradizionali film compositi, i monofilm sono più sensibili al calore e tendono ad allungarsi maggiormente durante la sigillatura, incrementando potenzialmente il volume degli scarti. Pertanto, è fondamentale regolare accuratamente il processo di saldatura (durata e temperatura) durante la produzione.</p>
<p><strong>Adattabilità delle macchine</strong></p>
<p>L&#8217;85% delle nuove soluzioni di macchine è compatibile sia con film tradizionali che con monomateriali. Anche i sistemi esistenti possono essere adattati per gestire i monomateriali. Con il continuo sviluppo di questi ultimi, l&#8217;uso di film di alta qualità è cruciale per ottenere soluzioni di imballaggio ottimali. <p>Gli studenti hanno inoltre avuto l’opportunità unica di partecipare all’interessante <i>case-history</i> presentata dall’ ing. Franco Ronconi, della società Galbusera, che si è conclusa con una visita molto apprezzata dai partecipanti presso lo stabilimento di Cosio Valtellino.</p>

<p>Questa volta abbiamo presentato una lezione dedicata all’importanza e alla complessità della rappresentazione tecnica, all’interno del corso di <i>Progettazione e gestione degli impianti nell’impresa alimentare</i>, del prof. Riccardo Guidetti. Il nostro scopo? Avvicinare i futuri tecnologi a quella che è la realtà industriale, fatta di <b>connessioni tra il mondo della tecnica e quello della tecnologia</b>.</p>
<p>Per cominciare, sono stati presentati agli studenti i principali passaggi da affrontare quando si deve realizzare un impianto: che esso riguardi attività di processo o di confezionamento, bisogna prima di tutto valutare e definire la tipologia di prodotto che si vuole produrre, la capacità produttiva richiesta, eventuali varianti di prodotto, i formati e dunque la scelta della tecnologia, considerando naturalmente quelli che sono i bisogni tecnici: spazi, flussi logistici, utilities.</p>
<p>Dopo aver approfondito, con una visione d’insieme. questi aspetti,  il focus si è spostato sulla rappresentazione tecnica, ossia come “mettere su carta” gli impianti, analizzando flowsheet, P&amp;ID e layout. Non ultimo, è stato illustrato il ruolo fondamentale, per una buona conduzione dell&#8217;impianto, del manuale tecnico di uso e manutenzione, dello schema elettrico e della simbologia. Alcuni cenni anche relativi alla sicurezza.</p>
<p>Ancora una volta, l’evento ha rappresentato un’occasione per contribuire, insieme alla preparazione accademica, alla crescita dei futuri professionisti del settore e per <b>avvicinarli alle dinamiche della realtà produttiva.</b></p>
