Short dough biscuits comprise the widest range of biscuits. Short dough biscuits are divided into 5 main categories:

  • molded biscuits
  • wire-cut biscuits
  • extruded biscuits
  • deposited biscuits
  • center-filled biscuits

The best known type of short dough biscuits are the molded biscuits. Compared to hard dough biscuits and crackers, the recipes for molded biscuits contain more fat and less water. Molded biscuits are produced by means of molding rollers. The product range can be widened as desired by adding so-called decoration devices.
